Like tony said. Simply do an install on the USB drive and configure it like it was before. I would advise that you unplug the data drives for the install to keep from mistaking one of the data drives for a boot device. It does happen when we don't pay attention. Don't forget to save the config to the USB drive.
After simply shut down, plug the drives in like before and reboot. Configure them for read/write and save and reboot again and you should be golden.
