I Finally got my Raid working with a Raid5 and just wondering if I can add a drive and not have to Reformat in NL.

Also if I move all my drives to a server with a new motherboard will I have to buy a new license? or will it boot up ok with the new MB??

There are no limits on moving NL to another machine, you will just have to get a new key from ServerElements but it is free so there will be no problems.

when you say get a new key, you mean I will have to do the unlock process again? will I have to reformat the drive?

No reformat or reload of the OS, just an Unlock. Free and takes less than a minute..
