I noticed on the storage config menu that for each disk I cannot use what I presume would be item 6 check and repair filesystem.

Is there a trick to make that available or is that supposed to be unavailable?

Have you used the journal option on these disks?

The disk must not be mounted before you can do a check and repair. Set Option 1 to [--] to park the drive, reboot and the option to check and repair will be available. Once check and repair has completed, export the drive again using Option 1 and reboot.
